Dan spent two summers working as a sommelier at La Closerie les Capucines, a small hotel nestled in the heart of Arbois in the Jura region of France.

This experience inspired the beginning of Santé Wine Tours: Uniquely curated trips that take guests on a deep dive into fascinating wine regions. Expect intimate visits with small winemakers and growers, delicious meals both rustic and luxurious, and a diverse offering of cultural activities.

Meet Your Guides

Daniel Solway, Santé

Dan, a Philadelphia-based sommelier, founded Santé as a way to share his passion for wine and food with others. What began as Zoom wine classes for friends and family during the pandemic evolved into a dynamic food and wine community, with Dan hosting unique dinners featuring local chefs from around the city. Each event challenges diners’ perceptions of wine and food.

With experience working at vineyards in Champagne, Austria, and Germany, as well as renowned restaurants like Oxalis, June, and Henry’s Wine & Spirits, Dan is dedicated to making wine more accessible, sustainable, and enjoyable. He loves large format bottles, porròns, and always brings energy to the party. He is excited to take Santé to the next level with its first travel experience in France.

Kristin Watts, Zephyr Selections

With 15 years of working in different sectors of the wine business focused on French wine, Kristin made Burgundy her home and is fully immersed in the wine culture and community, which she loves to share. She offers a unique insight into the varied aspects of wine and connects with locals to offer you an exclusive opportunity to understand what the books don’t tell you about wine - all of which she shares passionately as she guides you throughout the region.

Intimate connections with winemakers lend added value with the ultimate goal of creating a unique and memorable experience.

Sample Itinerary

  • Arrive in Dijon, Drive to Jura

    • Check into La Closerie

    • Dinner in Town

    • Morning: Museum Visit, Winemaker Visit

    • Afternoon: Lunch at Bistrot des Claquets; Thierry Moyne Studio Visit

      I came upon Thierry’s art during my first visit to the Jura. A former chef turned artist, Thierry utilizes both the physical terroir of the region and it’s wines in his painting, creating a beautiful and sensitive connection to the memory of the Earth.

    • Evening: Dinner at hotel restaurant

    • Morning: Winemaker Visit

    • Afternoon: Picnic Lunch at Le Derochoir; Winemaker Visit

      Joined by a group of young winemakers from around the region, we will have a picnic lunch (with wine of course) by Le Derochoir, the local watering hole. A great spot for taking a dip!

    • Evening: Dinner in Grozon

  • Leave Jura - Head to Burgundy

    • Morning: Brunch in Arbois

    • Afternoon: Drive to Burgundy; Lunch in Saint-Romain; Bike ride through Burgundy

    • Evening: Explore Beaune, Dinner in Town

    • Morning: Barrel Making Experience & Wine Tasting

      This includes a toasting and production demonstration and tasting of 4 wines aged in new barrels of different wood selection and barrel size.

    • Afternoon: Lunch at Cave Madeleines & Tonellerie Visit

    • Evening: Dinner and Tasting

    • Morning: Winery Visit

    • Afternoon: Winery Visit + Vineyard Lunch

    • Evening: Dinner in Savigny-lès-Beaune

  • Travel back to Paris via Dijon
